Holiday Recipe Contest Winners

Thank you to everyone who entered our 2011 Holiday Recipe Contest. It was a tough job to select just three winners from among all the entries we received.  Here are three delicious dishes that your family is sure to enjoy this holiday season.

Many people provided great low and no vision cooking tips along with their recipe.

Here are some of our favorites:

  • Use a duel sided cutting board with one side black and the other white for contrast.
  • Use a knife guard when cutting vegetables and other foods.
  • Measure spices over a separate bowl.

Anita Cohn of Cleveland, Ohio submitted this winning soup recipe.

Soup originally created by Richard Fugagli, of Erie, PA.

Pepper Soup
Anita's colorful soup will make your table look festive and warm up your guests on cold winter nights.

Ingredients:

Meatballs

1 lb hamburger
1 small egg
¼ cup dried onions
1 Tbsp Dijon mustard
Salt
Black Pepper

Broth

1 large onion
4 colored bell peppers
1 jalapeno pepper
1 16 oz package of frozen tomatoes
2 20 oz cans of beef broth
2 Tbsp butter
Instructions:
Mix all the ingredients for the meatballs together well.   Roll into meatballs.  Bake at 400 degrees until brown.  Set aside.

Finely chop the onion and slice the jalapeno pepper so that you get about 6 1/3 inch slices from each pepper.  Sauté the onions and jalapeno in the butter.  Let them sweat for about 5 minutes.  Then, cut the bell peppers into 1 ¼ inch strips and add them to the pot.  Cover and let this mixture sweat until the peppers are soft, usually about 15 minutes.  Make sure to stir every five minutes or so.

Add two cans of beef broth and tomatoes.  Add the meatballs.  Add salt and black pepper to taste.  Then let the mixture simmer on low heat for about 1 hour.

This winning recipe comes from Carla Richardson Simpson of Detroit, MI.

Carla's Island Turkey Wings
These spicy wings are a great way to change up a traditional turkey dinner or put your Thanksgiving leftovers to use.

Ingredients:

¼ onion
1 clove garlic
2 Tbsp orange juice
¾ cup Italian dressing
½ cup water
1 tsp basil
1 tsp crushed peppers
1 ½ tsp sea salt or seasoning salt
1 Tbsp curry seasoning
1 ½ tsp Jerk seasoning
¼ cup cream
5 whole turkey wings (cut at the joint)

Instructions:
Clean the turkey wings well and season with salt.   In a large baking pan add onions, garlic, crushed peppers, and the orange juice.  For zest, add Italian dressing.  Mix in cream and water.  Lastly top off by adding curry and Jerk seasoning.

Cover with aluminum foil and bake at 395 degrees for 1 hour and 10 min.  Periodically flip the wings.  Bake uncovered for another 10 minutes and then under the broiler for another 5 minutes to make the outside crispy.

Serve with Brown Rice and the gravy from the turkey.

This winning dessert was submitted by Audrey Demmitt of Peachtree City, GA.

Pumpkin Choco Cake
Sugar and spice is nice, but it's better with pumpkin and chocolate.  This dessert will please everyone at your holiday table.

Ingredients:

2 cups of flour
2 tsp baking powder
1 tsp baking soda
1 tsp salt
1 tsp cinnamon
1 tsp ground cloves
1 tsp all spice
1 tsp ginger
4 eggs
2 cups of sugar
2 cups of pumpkin
1 cup of vegetable oil
1 cup of bran flakes cereal
1 cup of chocolate chips
1 cup of chopped nuts

Instructions:
Combine all dry ingredients in a large mixing bowl. In a separate bowl beat eggs until foamy. Add pumpkin, oil, and cereal.  Mix into dry ingredients, stirring only until combined. Stir in chocolate chips and nuts. Spread evenly in a greased Bundt or tube pan.

Bake at 350 degrees for 60 minutes. Cool 10 minutes and remove from pan. Drizzle with confectioner sugar glaze (optional).
